Coconut Biscuit (eggless, without eggs) Recipe

Oven baked butter biscuits flavoured with vanilla and coconut.

Ingredients

  • 2oog desiccated coconut
  • 10ml vanilla essence
  • 250g self-raising flour
  • 100g butter
  • 80g castor sugar

Method

  1. Preheat the oven to 180 degrees.
  2. Cream butter and sugar together until light and fluffy.
  3. Add in the vanilla essence.
  4. Stir in the flour.
  5. Mix the mixture well until it forms a soft dough.
  6. Using the palms of your hands, roll portions of the dough into ping sized balls.
  7. Roll each biscuit ball into coconut.
  8. Flatten the biscuit balls slightly and place them onto a greased ovenproof tray.
  9. Bake the biscuits for 8-10 minutes.

 

Optional

1.Place a cherry on top of  each biscuit.
